The growth dynamics of Xanthomonas campestris and some of the biochemical phenomena governing xanthan biosynthesis were investigated. To gain more insight towards the metabolic physiology of X. campestris, an integrated metabolic bioreaction network was developed. Based on this network which is still missing in polysaccharide production systems, the metabolic flux distributions are calculated, so as to be able to define the "metabolic phenotype" of the microorganism under particular conditions. With this quatitative interpretation a structured model for xanthan bioprocesses has been developed. Based on these approaches, a new process for xanthan production of enhanced productivity and quality was developed and optimized. The benefits are certainly encouraging: a) improved product yield, b) increased rate of product formation, c) enhancement of product quality and uniformity, d) reduction in capital investment and unit production costs, and e) increase in plant production capacity.
